        If you are a Filipino, like me, you will definitely agree with me on this -Filipino Lechon Manok is the best compared to the other rotisserie chicken there is. Ours is full-blasting of flavor, the meat is fully cooked yet tender enough for you to enjoy. 

        I have been craving for that kind of chicken. I've tried several stores and restaurants but I couldn't find a place that serves the same as we do back home. So, I decided to try several recipes online and added my personal twists. After some attempts, I think it's just right for me to say that I finally have found "home" served in our American kitchen. And I can't be happier than knowing that I can now, at any day of the week, cook and enjoy the Filipino Lechon Manok that I enjoyed eating back home.

        With this, I would like to share with you this recipe so we all can be happy. I know that like me, there are so many Filipino expats out there who have been feeling home-sick and yearning to eat our own foods but can't find the right place that serves just the right authentic Filipino food. I hope that you guys will have fun in cooking and enjoy the meal, later once it's done and cooked, as much as I did!

 FILIPINO LECHON MANOK

ingredients:

whole chicken

lemons (or calamansi)

red onion

green onions (sibuyas dahon)

lemon grass

garlic

brown sugar

Worcestershire Sauce (or Oyster Sauce)

7-Up

Salt and Pepper to taste

Honey (optional) for glazing


Directions:

1. After cleaning the chicken, fill the meat cavity with quartered red onions, bundled green onions (dahon ng sibuyas), lemon grass and garlic.

2. In a big bowl prepare the marinade: lemon or calamansi, Worcestershire Sauce (or Oyster Sauce), 7-UP, salt and pepper and brown sugar. Use amount as per your preference. 

3. Rub or apply the marinade on the meat surface and fill some of the marinade in the meat cavity. 

4. Set aside marinated in the fridge for at least an hour. 

5. Preheat oven at 300F. Cover the chicken with aluminum foil and bake for 2 hours. 

6. Remove the foil and broil at 400F for 15 to 20 minutes or until skin is crispy.

7. Remove from the oven and serve while still hot. 

8. Serve with a SMILE!  :)
